Dubfire Explains The Similarities Between Techno And Cooking

How to serve up heat from both kitchens.

Since 2006, Ali Shirazinia, or Dubfire, has been a constant fixture on the techno circuit. Be it on Ibiza or in Berghain, the American producer’s hybrid DJ/live sets are sophisticated affairs that entice dancers with subtle layers of texture, color and tone. Each track in a Dubfire set can stand alone, but only makes sense as part of the larger whole of the DJ set; just like a dish which is only as good as the meal it is part of.

For Dubfire, however, the analogies between cooking and DJing are not just incidental. A gastronomical obsessive, Shirazinia draws much of his inspiration from cooking’s quest to find new flavour combinations that will open the palate up to new experiences. It is the process of developing flavors gradually—an art of delayed reward and timing—that gives cooking and techno their unique similarities.

As he discusses in a recent interview, “there is a very logical, natural type of progression within DJing and how you create the right atmosphere and how you tell that story from the beginning to end of your set in a logical sequence.” Just like at a restaurant, “they’re not going to give you the main course right away…they’ll follow with an amuse-bouche—you know, little tiny things that are sent out of the kitchen to open up your palate a bit. Then, they’ll continue with the appetizers and main course, then bring it down with a desert, and later coffee at the end.”
